AN EASY VEGETARIAN DINNER RECIPE WITH ZOODLES

Hello Hello, my lovelyMonday-ers! ‘Sup?! Happy start to the week – I hope we all have a great one!

I have to get something off my chest. It’s a guilty pleasure thing.

This weekend, I waited until everyone went to bed and I binge watched The People’s Couch! For 4 hours… What is wrong with me?!

Here’s everyone else talking about Scandal or Blue Bloods, and I’m all like, “But, YOU GUYS, the people on the People’s Couchare hilarious!!”… I got the “weirdo” look from everyone around me, but do I care?! NOPE. Sometimes their recaps are 100times better than sitting through an hour of some network tv program. Who’s with me??

Creamy Ricotta Zucchini Noodles | Zoodles Vegetarian Dinner Recipe (3)

Also? I can’t sit through an hour of TV… it’s like I’ve got ants in my pants.
Thank you, God, for DVRs and On Demand. And fast-forward.

Okay, time for food! Welcome to today’s episode of make believe noodles twirled in a very real ricotta sauce. Balance is life.wah wah waaaaah.

I don’t mean to be super obvious here, but we all know that real fettuccine would probably make a better starring role, right?! HOWEVER, let’s get real here. BARE legs-arms-tummies(?)-season is just about upon us, and allI’m trying to do is help out thisunderarm jiggle businessfind its way back to where it came from.

MY FAVORITE WAY TO COOK ZOODLES

Make no mistake, though, zoodles is where it’s at. I do a lot of zucchini noodles meals and there’s been plenty of times where this little family of mine thought they were real spaghetti. It’s all in the sauce, you know? AND in how they are prepared! I am not one to chill with raw zucchini. I like healthy, but not THAT healthy, ya know? Therefore, I always give my zoodles a swim in some hot olive oil for several minutes, or just until tender.

I’d also like to share with you that I have served this treat as a cold salad, I’ve served it as a side dish, and I have served it as a light main dish. However you decide to have it is all up to you – it’s good no matter how it’s served.

NOTE that ricotta is a protein-rich cheese that’s actually good for you, so go make somezucchini noodleswith garlicky ricotta sauce, serve it with blistered cherry tomatoesbecause it’s incredible, and then go for seconds. That’s sounds about right for aMonday.

    FAQs

How to cook zoodles so they aren't soggy? ›

To avoid soggy and limp noodles, I recommend cooking for only 3-5 minutes (5 if you're cooking more than 1-2 spiralized zucchinis) and tossing frequently. You want a slightly al dente noodle.

What are 3 advantages of having zucchini noodles over regular pasta? ›

Zucchini is low in fat, sugar, and calories, and high in vitamin C and fiber, making it a great substitute for traditional pasta noodles. Fiber helps to regulate bowels and maintain good digestive health, and vitamin C acts as an antioxidant to protect cells.

How to get moisture out of zucchini noodles? ›

After you've spiralized or turned your zucchini into ribbons, sprinkle them with a bit of salt and let them sit in a colander for at least 10 minutes. This will help get rid of some of the excess moisture. To cook them, saute them in 1 teaspoon of olive oil for a 2-3 minutes over medium heat.

Should you salt zucchini noodles before cooking? ›

Add zucchini noodles. Toss with tongs and let the zucchini cook for just a minute or two. Remove from heat and add to sauce or add some salt and eat as is. Note: Don't salt the zucchini before you saute it; the noodles will release more water and they'll end up limp.

How do you make zucchini not rubbery? ›

All you have to do is slice the zucchini into your desired shape, drizzle with oil, season, place on a baking sheet cut-side down, and pop it in the oven until it's nicely browned and tender. This can take 15 to 35 minutes, depending on the size of the zucchini.

How do you cook zucchini so it doesn't get mushy? ›

Slice and salt zucchini in advance of cooking to draw out some of the vegetable's excess moisture (while also seasoning it more thoroughly). To do this, cut up a pound of zucchini and toss it with ½ teaspoon of table salt. Let it drain in a colander for about 30 minutes before patting it dry and cooking it.

Which is healthier, pasta noodles or zoodles? ›

    Benefits of Eating Zucchini Noodles

If you are trying to eat low-carb, that is a huge difference! More fiber: Zucchini contains more grams of fiber per serving than regular pasta, which helps your digestive function, aids in weight loss, helps control blood sugar levels, lowers cholesterol, and more.

Does spiralized zucchini taste like pasta? ›

While zucchini noodles do not taste exactly like pasta noodles, if you cook them properly (meaning until they are al dente, not mushy), they are surprisingly satisfying.

Which has more carbs, spaghetti squash, or zucchini? ›

From the above comparison, you can tell that: Zucchini Pasta is lower in carbohydrates (3.361 g), in sodium (9 mg), in sugars (0.581 g), in total fat (0.084 g) and in calories (10 cals). Zucchini Pasta has more protein (1.371 g), more potassium (333 mg) and more dietary fiber (0.013 g).

How to get sauce to stick to zoodles? ›

The excess moisture will evaporate as they cook! Pat them dry. Use paper towels to remove any remaining moisture, then toss with your favorite sauce.

How do you know when zucchini noodles are done? ›

Bring a large pot of water to a boil over high heat, then season the water generously with salt. Add the zucchini noodles and cook until the noodles are crisp tender, 1 to 2 minutes.

Why is my zucchini so slimy when I cook it? ›

This, the outlet asserts, is due to zucchini's high water content: If it cooks too slowly, it will release its moisture before it sears, becoming soggy and sodden. Over high heat, on the other hand, zucchini becomes caramelized on the outside but retains a meaty, firm texture within.

Why do you soak zucchini before cooking? ›

Do you steam or sauté zoodles? ›

If you're already cooking on the stovetop, sautéing your noodles may be the easiest. Just add one tablespoon of olive oil or avocado oil to a pan and sauté for 1-2 minutes. This is a perfect cooking method if you're making zucchini pasta with lemon garlic shrimp – or something similar.

How do you keep zucchini from getting soggy when sauteed? ›

How to Prevent Soggy Sauteed Zucchini. Cut the zucchini in half lengthwise and use a spoon to remove some of the seeds. The seeds are practically all water, so removing some of the seeds helps prevent excess moisture. Cut the zucchini at least 1/2-inch thick (see image).

Why is my zucchini always mushy? ›

    Reduce cooking time

Since zucchini gets mushy and soft when overcooked, my first tip is obvious - reduce the cooking time. Depending on the recipe, this is an easy step to implement.
